The CCTV footage shows a man in a light-coloured hoodie who broke into the centre in the early hours of 5th July pouring accelerant through the building before setting it alight.
The fire caused about $400,000 in damage and led to the business being closed for a number of weeks. It has only recently re-opened to the public.
NSW Police Strike Force Bardwell released the CCTV footage in the hope that the public will help identify the man in the footage.
Strike Force Bardwell has been established to investigate the blaze and comprises detectives from the Property Crime Squad's Arson Unit and the Hawkesbury Local Area Command.
Detectives have spoken to a number of people who have provided them with information about the incident, but are still seeking further assistance from the public.
Anyone with information to assist police should call Crime Stoppers on 1800 333 000.
NSW Police remind people they should not report crime information via Facebook and Twitter pages.
